1 head green cabbage
1 cup maple syrup
head red cabbage
1 cup olive oil
1 red apple
1 cup apple cider vinegar
A few red radishes, or 1/2 of a red bell pepper
1 teaspoon spicy mustard
A few carrots
Slice cabbages into ribbons and set aside in a large bowl. Dice the apple (leave on the pretty skin) and add to the bowl. Toss core in compost pile!
Dice carrots and slice the radishes, and/or red bell pepper and add to the bowl with the cabbage and apple. Refrigerate.
Whisk the maple syrup, olive oil, apple cider vinegar and mustard together. Gradually add the mayonnaise. Blend well. Season with salt and sugar, if desired.
Toss the cabbage mixture with the dressing and serve with the Barbecue Pulled Chicken Sandwich!
This is a beautiful coleslaw, a calico coleslaw, and the dressing is spectacular. If you leave out the mayonnaise, you can also use the dressing on a green salad. (I then use baby greens, blueberries, blue cheese and walnuts
