We love the rich flavor and jammy texture of grilled figs, here perfectly matched with tangy blue cheese and lightly crisped ham. For the most Spanish-tasting dish, use Serrano ham and Cabrales cheese. If they’re not available, though, you can use prosciutto and any good-quality blue cheese.
Our friends Valerie and Ihsan Gurdal, of Formaggio Kitchen in Boston and New York, insist that you should use whatever variety of blue cheese is made closest to you; we’re sure that, as usual, they’re right.
