2 1/2 pounds ground Kobe beef
3 large eggs
1/2 Maui sweet onion, minced
1 1/3 cups panko breadcrumbs
2 tablespoons unsalted butter
2 ounces grated Parmesan
1 tablespoons minced garlic
1 teaspoon sugar
1/4 cup soy sauce
1/2 tablespoon kosher salt
2 teaspoons ground cumin
1 tablespoon ground black pepper
1 tablespoon chopped thyme
3/4 cup brown sugar
1 tablespoon fresh chopped parsley
3/4 cup ketchup
1 tablespoon fresh chopped chives
1 red onion, sliced to 1/8"
Melt butter over medium-low heat, add Maui sweet onions and garlic and cook until translucent. Cool.
In a mixing bowl, gently mix ground beef, onions, garlic, soy sauce, cumin, all herbs, eggs, Parmesan, sugar, salt and pepper.
Form into seven-ounce ovals -- should yield between seven to eight portions. Place on a greased sheet pan.
In a separate pan, bring brown sugar and ketchup to a boil. Remove from heat and cool.
Spoon ketchup mixture over oval meat loafs. Top with a generous amount of sliced red onion.
Preheat oven 325 degrees Fahrenheit and bake approximately 20 minutes or until internal temperature reaches 155 degrees Fahrenheit.
Serve over mashed potatoes.
Optional: Garnish with crispy shallots (found in your local Asian Market).
