3 large ripe apricots (about 8 ounces)
1/3 cup sugar
1/2 cup water
1 ripe mango (about 10 ounces)
1/2 tablespoon fresh lime juice
Cut the apricots in half, discard the pit and coarse chop the flesh. Put the apricot pieces together with the sugar and water in a small pot over low-medium heat until the sugar dissolves. Remove from heat and cool completely.
Peel the mango and cut the flesh around the pit, making sure to cut as much as possible. Discard the pit and put the mango in a blender or food processor together with the apricots and salt.
Once it is completely smooth, add the lemon juice and divide into molds. Cover them with the mold lid and freeze for at least 4 hours.
If you are using sticks, freeze the pops for about 1 hour until they are partially frozen and insert the wooden sticks. Continue to freeze for at least 3 more hours.
