In the weeks leading up to Christmas, it’s very likely you’ll find me in the kitchen whipping up batches of glazed sugar cookies, gingerbread Christmas trees and caramel shortbread for holiday gift giving and eating. For me, it’s a way to relax after a busy workday, and hours spent shuffling between ice rinks, music lessons and piles upon piles of homework.
I realize, though, that not everyone feels the same way I do, and the thought of baking dozens of confections can actually cause stress, instead of reducing it. Which is why I’m fond of these no-bake chocolate cookies.
Requiring only half an hour to put together, this dark and decadent goodie oozes with flavour. Sturdy oats combine with a double dose of chocolate and hint of clementine zest to recreate a childhood favourite. When embellished with holiday-inspired sprinkles they instantly look festive and are pretty enough for packaging, or passing around at a party.
