1 pack of PC® Burst of Flavour™ Tomato of Yore
4 cups of watermelon
1/2 cup of PC® Goats Milk Feta
1 bunch of fresh basil
4 Tbsp of PC® New World EVOO™ Extra Virgin Olive Oil
2 Tbsp of PC® Trebbiano Grape condiment vinegar
1/4 cup of pickled red onions
salt and pepper to taste
PICKLED RED ONIONS:
1 medium red onion, thinly sliced
½ cup apple cider vinegar
1 cup warm water
1 tablespoon sugar
1½ teaspoons Kosher salt
Start by slicing 1 pack of PC® Burst of Flavour™ Tomatoes of Yore into wedges. Each tomato can be cut into 8 pieces. Peel and cut watermelon into 1 inch by 1 inch cubes. Set aside.
In a small jar or bowl combine PC® New World EVOO Extra Virgin Olive Oil and PC® Trebbiano Grape condiment vinegar to make your vinaigrette.
In 4 individual bowls or plates divide tomatoes and watermelon cubes, season with salt and pepper. Drizzle vinaigrette evenly over all salads and top with crumbled goats milk feta. Tear or slice basil onto salads. Garnish with pickled red onions. Enjoy!
PICKLED RED ONIONS: Combine vinegar, water, sugar, and salt in a pot.
Whisk together and bring to a simmer until sugar and salt are fully dissolved then remove from heat.
Place onions in a jar or bowl (I like to use a mason jar). Pour hot vinegar mixture over the onions and let sit at room temperature for at least 1 hour if you're in a rush. Preferably, cover jar or bowl and place in refrigerator for at least 1 day.
